There are various hormones in the body that tell certain types of calories what to convert into. The hormone that tells the body whether to clog the artery or clean out the artery is called insulin. Insulin is like a switch that converts fat as storage in the body and clogs arteries. Insulin is a very inflammatory hormone, and if you have too much of it, you can have a lot of inflammation, which can set you up for developing a clot in the arteries. So, what started the clot was really insulin and not consuming cholesterol. The body makes a lot of cholesterol. When you consume more fat, your body makes less. What really creates the clogged artery is high levels of insulin from consuming too many carbohydrates.
